| History |
The Rivesaltes appellation in the Languedoc-Roussillon region is one of the historic sites for the production of natural sweet wines (Vins Doux Naturels or VDN), where the technique for making this special beverage was perfected over centuries. The origin of the VDN style is linked to the 13th century, when the rector of the University of Montpellier, Monsieur Arnaud de Villeneuve, may have discovered the principle of mutage—stopping fermentation by adding alcohol to preserve the natural sugar level in the wine. This process allows for the creation of a wine that is both alcoholic and naturally sweet, capable of long aging, acquiring sophisticated and complex flavour nuances, especially the so-called rancio notes.
